Meat and Cornbread Squares

There just aren't enough ground beef recipes, I swear. Anyways, here's a good one from Better Homes and Gardens Cookbook.

1 lb ground beef
1 TBS cornstarch
1 TBS dried minced onion
1-2 tsp chili powder
1/2 tsp garlic salt
14 1/2 oz can diced tomatoes

1 package cornbread mix (i.e. Jiffy)
cheese

1. Brown and drain ground beef in large skllet. Stir in cornstarch, onion, chili powder, and garlic salt. Stir in undrained tomatoes and most of the can of diced green chilies. Cook over medium heat until thickened and bubbly. Cook and stir 2 minutes more.

2. Prepare cornbread mix according to box directions. Add and handful of cheese and the remaining diced green chilies.

3. Pour half batter into greased square baking dish. Spook meat mixture on top, then top with reamining corbread mix. Bake at 350 for 30 minutes.

  1. thank you! You're a lifesaver. They didn't print this recipe in the new cookbook that I just bought.. but didn't realize it until i'd thrown my old one away. I do a couple things different though. I replace the tomatoes with green chiles and I put some creamed corn in the cornbread. It is SO good!

  2. You substituted their cornbread recipe included in the original for some boxed mix. I must say, their cornbread with the cream-style corn in it is far tastier and while yes, it's a few extra steps, it is also healthier.

    The original cornbread recipe is

    3/4 C all purpose flour
    3/4 C cornmeal
    2 t. baking powder
    2 beaten eggs
    1 8.5 oz can cream-style corn
    1/2 C milk
    3 T. cooking oil
    1 C shredded cheddar or Monterey Jack cheese
