This was an extremely fast, easy meal, and it tasted good too! It also looks real pretty when it's done. Total score for a weeknight meal, and maybe even for company. I used a few more pieces of meat (6 pieces instead of 4), and added a little more of the bread crumbs and Parmesan cheese, and also needed a little more butter and oil for the extra pieces of chicken.
- 4 (4 oz) boneless, skinless chicken breast halves
- 1/2 cup seasoned bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried basil
- 1 egg
- 1 TBS butter
- 1 TBS vegetable oil
- Flatten chicken to 1/4 inch thickness.
- In a shallow bowl, combine bread crumbs, Parmesan cheese, and basil. In separate bowl, beat the egg. Dip the chicken in egg, then dredge in bread crumbs.
- In large skillet, brown the chicken in butter and oil over medium heat for 3-5 minutes on each side, or until juices run clear.
